The appellation's soil diversity fascinated the duo, especially in the vineyards planted on Kimmeridgian limestone terraces known as ‘causses’. “It took us five years to find limestone in Argentina, here, it took five minutes.” Pedro exclaims. As a result, they identified two remarkable vineyards to make wines from, ‘Terrasse’ and ‘En Pente’, founding Causse du Théron in the process. Today Antonio and Pedro work with talented winemakers Sebastien and Pierre Sigaud’s, whose father Jean-Marie drove the quality resurgence in Cahors and was early to recognise the potential of limestone-grown Malbec.\u003c\/p\u003e\n\u003cp class=\"MuiTypography-root accordion_paragraphSection__v26kt MuiTypography-body1\"\u003ePlanted on alluvial soil, the ‘Terrasse’ vineyard sits in a valley that is easily accessible, making it well placed to be harvested by machine. Once picked, the wine is fermented using indigenous yeasts in cement tanks and aged for a year before bottling. The final ‘Terrasse’ wine is incredibly pure, with expressive notes of ripe mulberry, blackberry and spice on the nose with fresh acidity and velvety tannins on the palate.\u003c\/p\u003e\n\u003cp class=\"MuiTypography-root accordion_paragraphSection__v26kt MuiTypography-body1\"\u003eConversely, the ‘En Pente’ vineyard is planted on steep Kimmeridgian limestone terraces which must be harvested by hand. Like ‘Terrasse’, ‘En Pente’ is fermented with indigenous yeasts in concrete tanks but is aged for two years rather than one. The grapes are sourced from a 2.5 hectare selected plot in the 12-hectare Terrasse vineyard, which is located in a valley on alluvial soil rich in calcium carbonate. The vines are 40 years old, resulting in a wine of excellent concentration.\u003c\/p\u003e\n\u003cp class=\"MuiTypography-root MuiTypography-body1\"\u003e\u003cmeta charset=\"utf-8\"\u003e\u003cspan\u003eThe 2023 vintage in Cahors was earlier than usual. The combination of a mild winter and a dry summer led to early budding. Careful management in the winery was needed but the wines produced are vibrant with balanced acidity and ripe fruit flavours.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MuiTypography-root MuiTypography-body1\"\u003e\u003cspan\u003e\u003cmeta charset=\"utf-8\"\u003eThe grapes were machine harvested. After careful sorting at the winery, fermentation took place in temperature-controlled, stainless-steel tanks using ambient yeasts. The wine spent between 15-21 days on its skins with gentle pump overs to aid extraction. The wine then aged for 18 months in cement tanks to allow it to mellow. The wine was lightly filtered prior to bottling, however, no fining took place.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"MuiTypography-root MuiTypography-body1\"\u003e\u003cspan\u003e\u003cmeta charset=\"utf-8\"\u003eThe ‘Terrasse’ has ripe kirsch aromas on the nose with hints of candied fruit. On the palate, this wine has fresh acidity and delicate tannins with flavours of ripe blueberries.
